A Lowfat Beanless Turkey Chili with Yellow Tomatoes and Guajillo Chilies

Brown one pound of lean ground turkey with the spices in 2 tbsp of a good olive oil, then add the chopped veggies. When golden, add the stock and tomatoes, cover and let simmer about 20 minutes.  You can also cook the sauce down until it’s very thick and rich.  These spices will give you high flavor without high heat.  Serve over rice or in a tortilla.

Brown one pound of lean ground turkey, then add to the pan:
8 garlic cloves finely chopped
A large onion, finely chopped
4 stalks of celery, chopped
1 medium red pepper, chopped
1 medium yellow pepper, chopped
3 stalks of kale, leaves and stalks chopped
3 guajillo chilies, stem off, seeds discarded

1/2 cup raisins
1/2 cup dried cranberries

1 cup low sodium chicken or vegetable stock
1 package (10 oz) yellow grape tomatoes

1 tsp sea salt, more to taste
1 tsp coarsely ground black pepper
1 tsp cumin powder
1 tsp dried oregano
1 tsp fresh ground coriander seeds
1 tsp ground cinnamon or one cinnamon stick
2 tsp chili powder
1 tbsp freshly dried rosemary leaves (1 long dried sprig)
