Because at midnight when I&#8217;m thinking about wandering into the kitchen, I&#8217;ll be glad they are there. I&#8217;ve learned my lesson.<\/strong><\/span><\/p>\n<p><!--more--><\/p>\n<p><strong><span style=\"color: #000000;\">Make a plate of some baby carrots, celery stalks and scallions and serve with some hummus dip.<\/span><\/strong><\/p>\n<p><span style=\"color: #000000;\"><strong>Spread some fresh celery stalks with Peanut Wonder or lowfat peanut butter.<\/strong><\/span><\/p>\n<p><strong><span style=\"color: #000000;\"><span style=\"font-family: 'Trebuchet MS';\">Pita triangles with tabouli and\/or hummus dip.<\/span><\/span><\/strong><\/p>\n<h2><strong><span style=\"color: #000000;\"><span style=\"font-family: Trebuchet MS;\"><span style=\"color: #ff0000;\">10 Minute Hummus<\/span><br \/>\n<\/span><\/span><\/strong><\/h2>\n<p><strong><span style=\"color: #000000;\"><span style=\"font-family: Trebuchet MS;\">One 16 oz can of chickpeas or garbanzo beans<br \/>\n1\/4 cup liquid from can of chickpeas<br \/>\nJuice of one lemon (depending on taste)<br \/>\n1 &#8211;\u00a01\/2 tablespoons tahini<\/span><\/span><\/strong><\/p>\n<p><strong>3\u00a0cloves garlic, crushed<\/strong><br \/>\n<strong>1 teaspoon sea salt<\/strong><br \/>\n<strong>2 tablespoons olive oil<\/strong><br \/>\n<strong>A handful of chopped parsley, maybe fluffing up to a cup including fluffy tops<\/strong><\/p>\n<p><strong><span style=\"font-size: 10pt;\"><em>Preparation:<\/em><\/span><\/strong><br \/>\n<strong>Drain chickpeas and set liquid aside for later. Combine remaining ingredients in blender or food processor. Add 1\/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth.<\/strong><\/p>\n<p><strong>If this was a dip, you&#8217;d add more garbanzo bean water to make it dippy.\u00a0 To keep it firmer and more sandwichey, less garbanzo water<\/strong><\/p>\n<h2><span style=\"color: #ff0000;\"><strong><span style=\"font-family: Trebuchet MS;\">Tabouli<\/span><\/strong><\/span><\/h2>\n<p><strong><span style=\"color: #000000;\">1 cup cracked wheat (bulghur)<br \/>\n1 cup very hot water<br \/>\n1 small cucumber, chopped<br \/>\n1 small tomato, chopped<br \/>\n4 scallions, sliced<br \/>\n1\/2 cup fresh chopped mint<br \/>\n1 cup fresh chopped parsley<br \/>\n4 cloves garlic, minced (optional)<\/span><\/strong><\/p>\n<p><span style=\"color: #000000;\"><strong>1\/4 cup fresh lemon juice<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>4 tablespoons of extra virgin olive oil (to make it fatfree, substitute chickpea liquid or\u00a0broth)<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>Pepper and salt, to taste<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>Soak the cracked wheat in the hot water until the water is absorbed, about 30 minutes. Drain any excess water, if necessary, and squeeze dry.<\/strong><\/span><\/p>\n<p><strong>Combine the salad ingredients, including wheat, in a medium bowl. Mix the dressing ingredients together and stir into the salad mixture.
