{"id":711,"date":"2013-10-17T12:40:38","date_gmt":"2013-10-17T16:40:38","guid":{"rendered":"http:\/\/goddessgrub.com\/blog\/?p=711"},"modified":"2013-10-17T12:42:06","modified_gmt":"2013-10-17T16:42:06","slug":"lowfat-vegan-creamy-mushroom-soup","status":"publish","type":"post","link":"http:\/\/goddessgrub.com\/blog\/lowfat-vegan-creamy-mushroom-soup\/","title":{"rendered":"Lowfat Vegan Creamy Mushroom Soup"},"content":{"rendered":"<p><a href=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2013\/10\/soup-mushroom.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-724\" alt=\"soup mushroom\" src=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2013\/10\/soup-mushroom.jpg\" width=\"192\" height=\"144\" \/><\/a>1 tablespoon olive oil (do not cook with <a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=george&amp;dbid=56\">extra virgin<\/a>)<br \/>\n1 medium onion (approx 8 oz, 1 cup) chopped<br \/>\n2 teaspoons <a href=\"http:\/\/goddessgrub.com\/blog\/?p=392\">garam masala<\/a><br \/>\n4 medium potatoes, with skins still on,\u00a0chopped small<br \/>\n2 large carrots, chopped small<br \/>\n5 ounces fresh shiitake mushrooms<br \/>\n5 ounces fresh portobello mushrooms<br \/>\n5 ounces fresh cremini (or porcini) mushrooms<br \/>\n2 pints vegetable stock<br \/>\n2 springs of fresh thyme<br \/>\n1 bay leaf<br \/>\n1\/2 cup fresh parsley, chopped<\/p>\n<p><!--more-->Directions:<br \/>\n1.\u00a0Heat the olive oil in pan on medium heat and add the onion, potatoes and carrots, along with the\u00a0garam masala. \u00a0You want the veggies soft and golden.<br \/>\n2.\u00a0Add the mushrooms and thyme, cook 10 minutes, until starting to get golden.<br \/>\n3. Add\u00a0the vegetable stock and bring to a boil.<br \/>\n4.\u00a0Reduce the heat, cover and simmer\u00a0for 30 minutes.<br \/>\n5.\u00a0Add the fresh parsley and use a hand held stick blender to blend half of it smooth and creamy. Leave half of it unmixed for texture.<br \/>\n6. \u00a0Add salt and pepper for taste.<br \/>\n7. I also like a float of lemon juice and fresh parsley<br \/>\n8.
