id=\"caption-attachment-82\" class=\"wp-caption-text\">Light and lowfat<\/p><\/div>\n<p>It&#8217;s finally chilly here and hot flashes were welcome last night, they kept me warm. \u00a0I am a freezie cat and keep windows open until it goes below 50. \u00a0I made a yummy potato corn soup for brunch. \u00a0I used to make heavy and creamy chowders. \u00a0Now I do light and healthy versions that are just as satisfying. \u00a0More so, since I learned to layer flavors in a broth rather than depending on butter, oil and cream for flavor. \u00a0Whenever I cook <a href=\"http:\/\/goddessgrub.com\/blog\/?p=74\">Eddy&#8217;s smoked turkey legs<\/a>, or <a href=\"http:\/\/www.jennieo.com\/products\/110-Turkey-Ham\" target=\"_blank\">Jennie-O turkey ham<\/a>, I keep some cooked meat in the freezer to use later for soup flavoring. \u00a0Here&#8217;s the recipe, it makes about a quart. \u00a0I used to make huge soups. \u00a0I don&#8217;t do that any more. \u00a0I&#8217;d rather a smaller soup so I can make a new one every few days.<!--more--><\/p>\n<p>2 tblsp olive oil<br \/>\n1\/2 cup of corn kernels, fresh or frozen<br \/>\n1 chopped white onion<br \/>\n1 chopped large carrot<br \/>\n1 chopped stalk of celery<br \/>\n2 cups chopped potato<br \/>\n1\/2 cup shredded leftover smoked turkey<br \/>\n3 cups light chicken broth<br \/>\n1\/2 tsp dried thyme leaves<br \/>\n1\/2 tsp garlic powder<br \/>\n1 star anise (will remove before serving- omit if you dislike licorice)<br \/>\n1\/4 tsp crushed fennel seeds (omit if you dislike licorice)<br \/>\nsea salt and coarse ground pepper to taste<br \/>\nsqueeze of lemon if you like (I like it on almost everything)<\/p>\n<p>Preparation<br \/>\nHeat olive oil in a sauce pan over medium heat. \u00a0 Add the fennel seeds and onion, carrot, thyme and celery, and saut\u00e9 3-4 minutes until lightly browned. \u00a0Add the smokey turkey, the potato, corn, garlic powder, star anise and chicken broth. \u00a0Increase heat to high and bring to a boil. \u00a0Cover, reduce heat, and simmer 30 minutes.<\/p>\n<p>Remove the star anise. \u00a0This makes a light but well flavored soup.<\/p>\n<p>If you&#8217;d like it more hearty, increase the turkey, corn, potatoes and seasonings, or even add a little milk or cheese to make it an official chowder.<\/p>\n<p>Top with fresh basil or fresh chopped
