{"id":546,"date":"2013-08-24T08:32:54","date_gmt":"2013-08-24T08:32:54","guid":{"rendered":"http:\/\/goddessgrub.com\/blog\/?p=546"},"modified":"2013-08-24T09:19:15","modified_gmt":"2013-08-24T09:19:15","slug":"vegan-cornflour-blueberry-pancakes","status":"publish","type":"post","link":"http:\/\/goddessgrub.com\/blog\/vegan-cornflour-blueberry-pancakes\/","title":{"rendered":"Vegan Cornflour Blueberry Pancakes Gluten Free"},"content":{"rendered":"<p><a href=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2013\/08\/pancakes-cornflour-blueberry.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-547\" title=\"pancakes cornflour blueberry\" src=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2013\/08\/pancakes-cornflour-blueberry.jpg\" alt=\"\" width=\"144\" height=\"108\" \/><\/a><\/p>\n<p><span style=\"font-size: 16px;\">1 cup + 1 tbsp corn flour<\/span><br \/>\n<span style=\"font-size: 16px;\">1 tsp baking powder<\/span><br \/>\npinch of fine sea salt<br \/>\n3\/4 cup non-dairy milk (soy, rice, almond, coconut)<br \/>\n1 tsp light vegetable oil<br \/>\n1\/2 cup fresh blueberries<br \/>\n1 flax egg* (1 tbsp of ground flax seed mixed with 3 tbsp hot water, let sit for 2 minutes then it&#8217;s ready to add)<br \/>\n<span style=\"font-size: 16px;\">Earth Balance vegan margarine for frying<br \/>\n<\/span><span style=\"font-size: 16px;\">Makes about 8 small pancakes.<\/span><\/p>\n<p><!--more--><\/p>\n<p>Heat a frying pan or griddle to medium-high heat. \u00a0In a medium sized bowl mix together the corn flour, baking powder &amp; salt. \u00a0Add the flax egg, oil &amp; \u00a0milk and mix well, but lightly, so that no lumps remain, and then fold in the blueberries.<\/p>\n<p><span style=\"font-size: 16px;\">Place a bit of Earth Balance in your pan to melt and then add about 1\/4 cup of the pancake batter for each pancake. \u00a0Cook until the top bubbles, about 4 minutes, then flip and cook for another 2 or 3 minutes until the bottoms are browned. \u00a0Keep warm in the oven at 200&#8242; until all the pancakes are cooked and ready to serve. <\/span><\/p>\n<p>** haven&#8217;t tried <span style=\"color: #800080;\">flax eggs <\/span>yet?\u00a0 they&#8217;re a great egg replacement in baking. \u00a0For one flax egg, mix 1 tbsp of ground flax seed with 3 tbsp hot water. \u00a0Allow to sit for 2 minutes and your flax egg is ready!
