{"id":488,"date":"2011-06-26T11:30:35","date_gmt":"2011-06-26T11:30:35","guid":{"rendered":"http:\/\/goddessgrub.com\/blog\/?p=488"},"modified":"2013-06-26T14:53:22","modified_gmt":"2013-06-26T14:53:22","slug":"stocks-and-broths","status":"publish","type":"post","link":"http:\/\/goddessgrub.com\/blog\/stocks-and-broths\/","title":{"rendered":"Stocks and Broths"},"content":{"rendered":"<p>What&#8217;s the difference between stock and broth? \u00a0Stock is an ingredient and broth is a finished product.\u00a0\u00a0You make a flavorful stock to use as a base for\u00a0soups and other recipes.\u00a0 Many times, I simply use a box of Swanson broth. \u00a0See recipe:\u00a0<!--more--><\/p>\n<p><span style=\"color: #ff0000;\">Basic Vegetable Stock (8 cups) <\/span><br \/>\n5 carrots, chopped<br \/>\n2 stalks celery, chopped<br \/>\n2 onions, chopped<br \/>\n1 head garlic, chopped<br \/>\npotato peelings (wash first)<br \/>\n1 turnip, sliced<br \/>\nAny wilted veggies in the fridge that aren&#8217;t too strong, chopped<br \/>\n1 bay leaf<br \/>\n1 handful parsley<br \/>\n1 teaspoon salt and peppercorns<br \/>\n12 cups water<\/p>\n<p>Bring all ingredients to a boil, lower heat, and boil gently for 45 minutes to one hour, til all the goodness is sucked out of the vegetables. Strain. Adjust seasoning.<\/p>\n<p>NOTE: If you want darker broth, brown the vegetables in oil for 10-15 minutes over medium heat, then add water and herbs and bring to a boil, scraping up any dark bits from the bottom of the pan.
