Maybe because I worked from home for so long that I got in the habit of eating most of my meals out.\u00a0 That was before I knew how much hidden fat I was getting in restaurant food.\u00a0 (A popular national steakhouse chain restaurant bakes their potatoes with bacon wrapped around\u00a0them!)\u00a0 I have a handful of favorite dishes I cook for myself and for friends and one of my favorite things to cook is soup.\u00a0<span style=\"font-size: 16px;\">Sometimes I do this in a structured manner, like deciding on split pea soup and buying just those ingredients, but most often I find myself in the store looking at a juicy stalk of fennel next to a fat leek and the ideas start to flow. If I have no direction in mind, I can just let the fresh vegetables of the day direct me.<!--more--><\/span><\/p>\n<p>I love all kinds of soups. I love thick, chunky stews and I love a simple, delicate broth. I like leafy kale soups and hearty root vegetable soups.<\/p>\n<p>In my past incarnation (in this lifetime), I was a heavy meat eater. Sausage and ham hocks were the first ingredients into every soup! As I turned more health conscious at the turn of the new millennium, I embarked on a mission to discover food alternatives with massive flavor and minimum fat, and big hunks of meat no longer appealed to me.\u00a0 I wrote about it here <span style=\"font-family: 'Trebuchet MS';\"><a href=\"http:\/\/www.horizonsmagazine.com\/2006Archives\/3-06.html\">Taking Responsibility for my own Health<\/a><\/span><\/p>\n<p>So here&#8217;s what I keep in my pantry now.<\/p>\n<p><span style=\"color: #ff0000;\"><span>MY VEGETARIAN FRIENDS DON&#8217;T READ THIS: <\/span><br \/>\n<\/span>Packaged fat free beef broth<br \/>\nPackaged fat free chicken broth<br \/>\nFrozen bay scallops<br \/>\nFrozen fish<br \/>\n<span style=\"color: #ff0000;\">OK TO READ NOW MY VEGGIE HEAD FRIENDS <\/span><\/p>\n<p><span style=\"color: #8000ff;\">My pantry always includes: <\/span><br \/>\nCanned tomatoes, large and small cans<br \/>\nCanned crushed tomatoes<br \/>\nCanned stewed tomatoes<br \/>\nCanned garbanzo beans for hummus<\/p>\n<p><span style=\"color: #8000ff;\"><span>I always have on hand: <\/span><br \/>\n<\/span>Fresh onions: white, red and Vidalia<br \/>\nFresh garlic in bulbs<br \/>\nA few sweet potatoes<br \/>\nA few white potatoes, or Yukon Gold for flavor<br \/>\nCarrots<br \/>\nCelery<br \/>\nScallions<br \/>\n<span style=\"font-size: 16px;\">Fresh basil and rosemary<\/span><\/p>\n<p><span style=\"color: #8000ff;\">Vegetables I may also include in a soup if I see them fresh are: <\/span><br \/>\nParsnips<br \/>\nFennel<br \/>\nLeeks<br \/>\nKale<br \/>\nPeppers: red, yellow and poblano<br \/>\nFresh English peas!<br \/>\nAsparagus<br \/>\nMushrooms<\/p>\n<p><span style=\"color: #8000ff;\">Favorite dried spices include: <\/span><br \/>\nSea salt finely ground<br \/>\nCoarse ground black pepper<br \/>\nGarlic powder (I go through maybe 5 oz a month)<br \/>\nTarragon<br \/>\n<span style=\"font-size: 16px;\">Thyme<\/span><br \/>\n<span style=\"font-size: 16px;\">Paprika<\/span><br \/>\nCayenne pepper<br \/>\nOregano<br \/>\nBay leaves<br \/>\nTurmeric<br \/>\nCinnamon, powder and in sticks<br \/>\nFresh seeds that I grind: coriander, fennel, cumin<\/p>\n<p><span style=\"color: #8000ff;\"><span>Favorite dried beans I keep on hand include: <\/span><br \/>\n<\/span>Pinto beans<br \/>\nSplit peas<br \/>\nWhite navy beans<br \/>\nRed kidney beans<br \/>\nGarbanzos<br \/>\nButter beans<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;m not someone who spends a lot of time in the kitchen.
