Add lettuce, tomato and <a href=\"http:\/\/www.walmart.com\/catalog\/allReviews.do?product_id=10322122\" target=\"_blank\" rel=\"noopener\">mediterranean pickles<\/a> before eating.\u00a0 I had to make this blog post so I could find the recipe again.<\/span><\/p>\n<p><span style=\"color: #000000;\">I love oven fried eggplant because i like it crispy without the oil.\u00a0 <strong><span style=\"color: #993300;\">Preheat a <span style=\"color: #008080;\">425 degree<\/span> oven, cut eggplant into 1\/2&#8243; rounds, dip in Eggbeaters, coat with seasoned panko or Italian breadcrumbs.\u00a0 <\/span><\/strong><\/span><strong><span style=\"color: #008080; font-size: 1rem;\">Place on a Pam-sprayed, foil-lined metal cookie sheet, leaving at least a pencil width space between them to let the sides crisp. <span style=\"color: #993300;\">Spray the tops with more Pam.\u00a0<\/span><\/span><\/strong><strong><span style=\"color: #008080;\">15-25 minutes on a lower rack in the oven, they&#8217;re done when they&#8217;re as golden as you like. I&#8217;m a 25 minute gal myself.\u00a0\u00a0<\/span><\/strong><\/p>\n<p><span style=\"color: #000000;\">Eggplant is really good this way. It puts like a fried chicken kinda crust on it, and the eggplant doesn&#8217;t get mooshy. This would also make a good sandwich on a sub roll with sauteed bell peppers and onions.\u00a0 The eggplant takes on a meaty-ish texture when done like this.\u00a0 If you don&#8217;t care about low fat, brush the eggplant rounds with olive oil as they bake.<\/span><\/p>\n<p><span style=\"color: #000000;\">I&#8217;ve also added 1 tsp each crushed coriander seeds and fennel seeds to the panko\/ breadcrumbs and it is delicious.\u00a0 Buy the<\/span> <a href=\"http:\/\/www.walmart.com\/catalog\/allReviews.do?product_id=10322122\" target=\"_blank\" rel=\"noopener\">mediterranean pickles <\/a><span style=\"color: #000000;\">at Walmart or<\/span> <a href=\"https:\/\/delivery.publix.com\/landing?product_id=82513&amp;utm_medium=sem_shopping&amp;utm_source=instacart_google&amp;utm_campaign=ad_demand_shopping_pbi_publix_rp&amp;utm_content=accountid-8847647239_campaignid-10371352302_adgroupid-102298299599_device-c&amp;gclid=Cj0KCQjw4ImEBhDFARIsAGOTMj9N0UMpWGoSqZe7vaC7MTUE15vexV5Nev7jkizdWF4-fKgWzaDJUIcaAvzfEALw_wcB&amp;zipcode_guess=32909\">Publix<\/a> <span style=\"color: #000000;\">in the kosher section.<\/span><\/p>\n<p><a href=\"http:\/\/horizonsmagazine.com\" target=\"_blank\" rel=\"noopener\">Read Horizons Magazine online<br \/>\n<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Last night&#8217;s dinner was oven fried eggplant wrapped in a pita with hummus, tahina sauce.\u00a0 Into the toaster oven for 10 minutes wrapped loosely in foil.
