This morning I was just gonna make some <strong>sushi rice<\/strong> for later, but it turned into chopping and sauteing <strong>celery, carrot, kale, tofu <\/strong>and making a very flat<strong> cheese omelet<\/strong>, all to be cut into strips for the rolls. I wrapped my <strong>bamboo roller<\/strong> in a clear ziplock bag, topped with a<strong> nori sheet<\/strong>, shiny side down, then blobbed my cooled <strong>rice<\/strong> (mixed with a little <strong>sesame oil<\/strong> and <strong>soy sauce<\/strong>) in the center and spread it thin. Topped with strips of each item as well as <strong>pickled ginger<\/strong>, drizzled with <strong>spicy mayo<\/strong>, I made 2 perfectly tight rolls. And they were delish.<\/span><\/p>\n<p><!--more--><br \/>\n<span style=\"color: #000000;\"><strong>10 years ago I was really into it, but prep is time consuming and lotsa chopping.<\/strong> It took me an hour start to finish today to make 2 nice rolls, the chopping is what takes time.\u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\"><a href=\"http:\/\/goddessgrub.com\/blog\/nori-maki-and-summer-rolls-are-as-easy-to-make-as-tacos-and-burritos\/\">Just like tacos and burritos<\/a>, it&#8217;s a bunch of chopping vegetables into slivers and having them ready in stackable plastic containers so you can lay them out in front of you when you&#8217;re making the roll.<\/span><\/p>\n<h2><span style=\"color: #000000;\">I&#8217;ve gotten a lot better at making the rolls smaller and tighter.\u00a0 <\/span><\/h2>\n<p><span style=\"color: #000000;\">It&#8217;s a balance since I want them compact but I don&#8217;t want the rice compressed.\u00a0\u00a0 I thought it would be like pancakes where the first thousand get thrown away, but I had it down about a dozen rolls later.<\/span><\/p>\n<h2><span style=\"color: #000000;\">I start by filling the fridge with stackable plasticware<\/span><span style=\"color: #000000;\"> containing uniform strips<\/span><span style=\"color: #000000;\"> of the vegs that will go in the rolls.<\/span><\/h2>\n<p><span style=\"color: #000000;\">Julienne strips of <strong>carrot, scallions, cucumber (seeds removed,) scallion, daikon radish, yellow squash, zucchini, <\/strong>along with<strong> sliced avocado<\/strong>, and leaves of <strong>Thai\/holy basil, coriander and mint<\/strong>.\u00a0 \u00a0FRESH HERBS MAKE ALL THE DIFF. Wash, dry, slice and stack when you get home from the store and you won&#8217;t take up all that room in the fridge.<\/span><\/p>\n<h2><span style=\"color: #000000;\">You can also add strips of chicken, fish, meat or shrimp.\u00a0 <\/span><\/h2>\n<p><span style=\"color: #000000;\">I&#8217;ve done it with <strong>sardines<\/strong>. You can do it with <strong>sushi grade raw fish<\/strong> if you can find it.\u00a0 You can sprinkle with <strong>sesame or sunflower seeds<\/strong> if you&#8217;d like. I wonder how an apple, blue cheese and walnut nori would taste.<\/span><\/p>\n<h2><span style=\"color: #000000;\">You can cut into matchsticks any vegetables you like <\/span><\/h2>\n<p><span style=\"color: #000000;\">Try them in different combinations.\u00a0 You&#8217;ll use only a thin stripe of veggies in the roll, much less than a full serving.\u00a0 Start with about two fingers worth of veggies and see how big your roll wraps up.\u00a0<strong> Avocado<\/strong> is a great binder and source of fat if you are not using meats.\u00a0 <\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>My typical ones contain carrot, celery, kale, omelet, ginger, pickled cabbage, sometimes beets or tofu, scallions if I have them.\u00a0<\/strong> I usually sprinkle with <strong>Bragg&#8217;s Liquid Aminos<\/strong> and eat with extra pickled ginger.<\/span><\/p>\n<p><span style=\"color: #000000;\">Besides using different combinations of veggies, here&#8217;s an odd one I like:<\/span><\/p>\n<h2><span style=\"color: #8f1313;\">RECIPE &#8212; ROASTED PEPPER AND CREAM CHEESE NORI <\/span><\/h2>\n<p><span style=\"color: #000000;\"> I like to spread <strong>softened cream cheese<\/strong> atop the\u00a0<strong>sushi<\/strong> rice, then add a stripe of <strong>alfalfa sprouts<\/strong>, a <strong>scallion<\/strong> stick and <strong>roasted red pepper strips<\/strong>.\u00a0 Wrap, cut and serve with <strong>soy sauce<\/strong> or this <strong>sweet chili dipping sauce<\/strong>.\u00a0 My cousin cheated and added bacon to his roll.<\/span><\/p>\n<h2><span style=\"color: #ff6600;\">HOMEMADE SWEET CHILI DIPPING SAUCE:\u00a0<\/span><br \/>\n<span style=\"color: #ff6600;\">Makes 1 Serving of Sauce<\/span><\/h2>\n<p>1 tsp <strong>rice vinegar<\/strong><br \/>\n1 tbsp <strong>lime juice<\/strong><br \/>\n1 tbsp <strong>palm sugar<\/strong> (or any sugar)<br \/>\n1 tbsp <strong>Three Crabs brand fish sauce<\/strong> (or any brand)<br \/>\n1 tsp of <strong>sambal oleck<\/strong> or <strong>chili garlic sauce<\/strong> (substitute might be crushed red chili flakes, chili pepper, sriracha)<\/p>\n<h2><span style=\"color: #993300;\">HOMEMADE SWEET CHILI DIPPING SAUCE:<\/span><br \/>\n<span style=\"color: #993300;\">Makes 1 Cup of Sauce<\/span><\/h2>\n<p>1\/2 cup <strong>rice wine vinegar<\/strong><br \/>\n4 tablespoons <strong>3 Crabs brand fish sauce<\/strong><br \/>\n1\/2 cup <strong>hot water<\/strong><br \/>\n4 tablespoons <strong>palm sugar<\/strong>, more to taste<br \/>\n2 <strong>lime<\/strong>s, juiced, more or less to taste<br \/>\n2 tsp minced <strong>garlic<\/strong><br \/>\n2 tsp <strong>red chili paste<\/strong>, such as <strong>sambal oleck<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve been watching Netflix&#8217;s Extraordinary Attorney Woo and her fave food is Korean gimbap aka kimbap., what Japanese call nori maki or sushi rolls.
