For traditional summer rolls tho, it&#8217;s as easy as a little prep ahead of time &#8212; chopping vegetables into slivers and having them ready in stackable plastic containers so I can easily lay them out in front of me when I&#8217;m making the roll.\u00a0<\/span><\/p>\n<p><strong><span style=\"color: #000000;\">I start by filling the fridge with stackable plasticware<\/span><span style=\"color: #000000;\"> containing uniform strips<\/span><span style=\"color: #000000;\"> of the vegs <\/span><\/strong><span style=\"color: #000000;\">that will go in the rolls. I w<\/span><span style=\"color: #000000;\">ash, dry, slice and stack when I get home from the store.<\/span><\/p>\n<p>I make my dipping sauces, see recipes below.<\/p>\n<p><!--more--><\/p>\n<h2><span style=\"color: #000000;\">You can cut into matchsticks any vegetables you like <\/span><\/h2>\n<p><span style=\"color: #000000;\"><strong><span style=\"color: #339966;\">Julienne strips of carrot, cucumber, scallion, daikon radish, yellow squash, zucchini, along with sliced avocado, <\/span><\/strong>and leaves of <strong><span style=\"color: #339966;\">Sweet or Thai\/holy basil, coriander, parsley<\/span><\/strong><span style=\"color: #339966;\"><span style=\"color: #000000;\">\u00a0and<\/span><\/span><strong><span style=\"color: #339966;\"> mint<\/span><\/strong>.\u00a0 Fresh herbs give a great bite of flavor. Try them in different combinations.\u00a0 <span style=\"color: #339966;\"><strong>You&#8217;ll use only a thin stripe of veggies in each roll, much less than a full serving.<\/strong>\u00a0<\/span> Start with about two fingers worth of veggies and see how big your roll wraps up.\u00a0 <strong><span style=\"color: #339966;\">Avocado<\/span><\/strong> is a great binder and source of fat if you are not using meats.\u00a0 Besides using different combinations of the above veggies, I like to include<span style=\"color: #9e1919;\"> <strong>spicy rice vermicelli<\/strong><\/span> in my summer rolls.<\/span><\/p>\n<h2><span style=\"color: #9e1919;\">RECIPE &#8212; SPICED RICE VERMICELLI FOR SUMMER ROLLS<\/span><\/h2>\n<p><span style=\"color: #000000;\">Toss a handful of <\/span><span style=\"color: #000000;\">r<\/span>ice vermicelli (rice sticks)<span style=\"color: #000000;\"> in boiling water, remove from heat and cover for about 12 minutes until tender.\u00a0 Drain.\u00a0 You&#8217;ll use the Homemade <strong><span style=\"color: #9e1919;\">Sweet Chili Dipping Sauce Recipe<\/span><\/strong>\u00a0below <\/span>a<span style=\"color: #000000;\">nd pour over. \u00a0Add <span style=\"color: #9e1919;\">1 tsp each of:\u00a0 chopped scallions, cukes, carrots, cilantro, basil, mint,\u00a0 pickled ginger, daikon<\/span> and mix together well.\u00a0 Drain well before including in summer roll.<\/span><\/p>\n<h1><span style=\"color: #000000;\">TO MAKE THE SUMMER ROLL<\/span><\/h1>\n<div id=\"attachment_1752\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-rolls-poorly-wrapped.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1752\" class=\"size-medium wp-image-1752\" src=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-rolls-poorly-wrapped-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-rolls-poorly-wrapped-300x300.jpg 300w, http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-rolls-poorly-wrapped-150x150.jpg 150w, http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-rolls-poorly-wrapped.jpg 504w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1752\" class=\"wp-caption-text\"><center>First attempts at wrapping. Sad but tasty.<\/center><\/p><\/div>\n<p><span style=\"color: #000000;\">Quickly dip your<\/span> rice paper<span style=\"color: #000000;\"> in or under running water for 1 second per side &#8212; you want it fully wet, you do NOT want it to soften. It will continue to soften as you work with it.\u00a0 Then place it on a damp cutting board.<br \/>\n<\/span><\/p>\n<p><span style=\"color: #000000;\">Place a lettuce leaf\u00a0 (the hard white part of the spine removed) in the palm of your hand.\u00a0 Spoon the spiced vermicelli onto the leaf and, if you like, add some carrot and cucumber matchsticks, a scallion stick,\u00a0 2 avocado slices.<\/span><\/p>\n<p><span style=\"color: #000000;\">I add a drizzle of sriracha, mayo and\/or Ranch<\/span><\/p>\n<p><span style=\"color: #000000;\">Then roll it up, keeping it gently tight and wrapping the sides toward the middle.\u00a0 You&#8217;ll get better at it. <\/span><span style=\"color: #000000;\">Cut in half.<\/span><\/p>\n<p><em><span style=\"color: #000000;\">You can also place 2 sheets of rice paper side by side and make one long, tight roll to cut in half.<\/span><\/em><\/p>\n<p><span style=\"color: #000000;\"><strong><span style=\"color: #339966;\">A sauce of equal parts peanut butter, hoisin and wat<\/span><span style=\"color: #339966;\">er is traditional<\/span><\/strong> but I like to serve with a sweet chili dipping sauce.<\/span><\/p>\n<h2><span style=\"color: #8c0e0e;\">HOMEMADE SWEET CHILI DIPPING SAUCE:<\/span><\/h2>\n<div id=\"attachment_1754\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-roll-in-half-looking-sad.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1754\" class=\"size-medium wp-image-1754\" src=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-roll-in-half-looking-sad-300x196.jpg\" alt=\"\" width=\"300\" height=\"196\" srcset=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-roll-in-half-looking-sad-300x196.jpg 300w, http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-roll-in-half-looking-sad.jpg 504w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1754\" class=\"wp-caption-text\"><center>Flavors are great, now to work on presentation<\/center><\/p><\/div>\n<p><strong><span style=\"color: #000000;\">Makes 1 Cup of Sauce<br \/>\n<\/span><span style=\"color: #9e1919;\"><em>You&#8217;ll use half to spice the vermicelli<\/em><\/span><\/strong><\/p>\n<p><span style=\"color: #000000;\">1\/2 cup rice wine vinegar<\/span><br \/>\n<span style=\"color: #000000;\">4 tablespoons fish sauce<\/span><br \/>\n<span style=\"color: #000000;\">1\/2 cup hot water<\/span><br \/>\n<span style=\"color: #000000;\">4 tablespoons palm sugar, more to taste<\/span><br \/>\n<span style=\"color: #000000;\">2 limes, juiced, more or less to taste<\/span><br \/>\n<span style=\"color: #000000;\">2 tsp minced garlic<\/span><br \/>\n<span style=\"color: #000000;\">2 tsp red chili paste, such as sambal oleck<\/span><\/p>\n<p><span style=\"color: #000000;\">Place all ingredients in a sauce pan or pot. Bring to a rolling boil.\u00a0 Reduce heat to medium and let simmer for 10 minutes, or until reduced by half. <em><span style=\"color: #9e1919;\">This should have a hot bite, the flavor will mellow a little when the rice vermicelli is added and when the roll is dipped into it.<\/span><\/em><\/span><\/p>\n<p><strong><span style=\"color: #ab2020;\"><em>Off to one side, make a cornstarch slurry in ROOM TEMP water:\u00a0<\/em><\/span><br \/>\n<\/strong>Add 2 tablespoons cornstarch shaken into 4 tablespoons room temperature water that you are whisking around quickly. \u00a0It will easily dissolve and make a thin paste.\u00a0<em>(If you pour the water into the cornstarch, it will make a big lumpy mess you can\u2019t use.)<\/em><\/p>\n<div id=\"attachment_1753\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-roll2-getting-tighter.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1753\" class=\"size-medium wp-image-1753\" src=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-roll2-getting-tighter-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-roll2-getting-tighter-300x300.jpg 300w, http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-roll2-getting-tighter-150x150.jpg 150w, http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2021\/08\/summer-roll2-getting-tighter.jpg 504w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><p id=\"caption-attachment-1753\" class=\"wp-caption-text\"><center>Slowly learning to wrap tighter<\/center><\/p><\/div>\n<p><span style=\"color: #000000;\">Add the cornstarch-water mixture to the sauce and turn the heat to low. Stir to incorporate and continue stirring occasionally until the sauce thickens, about 2 minutes.<\/span><\/p>\n<p><span style=\"color: #000000;\">Remove from heat and taste-test. You should taste sweet first, followed by sour, then spicy then salty. If the sauce isn&#8217;t sweet enough, add a little more sugar. If not hot and spicy enough, add more chili.\u00a0 If it needs salt, add more fish sauce.<\/span><\/p>\n<h2>I<span style=\"color: #000000;\"> also wrap traditional sandwiches in rice paper if I don&#8217;t want bread<\/span><\/h2>\n<p><span style=\"color: #000000;\">I&#8217;ve done <span style=\"color: #b53535;\">turkey and cheese<\/span> with red onion, tomato, avocado, celery and carrot.<br \/>\n<span style=\"color: #b53535;\">Fried egg and potato<\/span> or ham, or<span style=\"color: #b53535;\"> scrambled eggs with cheese<\/span> like a breakfast burrito.<br \/>\n<span style=\"color: #b53535;\">Tuna, chicken or egg salad<\/span> is excellent in them, with or without cheese.
