#000000;\">Marinate 1 lb of shrimp or bay scallops in the juice of 2 lemons while you begin<br \/>\n<\/span><span style=\"color: #000000;\">Saute 6 cloves freshly chopped garlic in <\/span><span style=\"color: #000000;\">2 tblsp olive oil<\/span><br \/>\n<span style=\"color: #000000;\"><strong><span style=\"color: #993300;\"><a parsnip<\/span><br \/>\n<span style=\"color: #000000;\">2 whole carrots<\/span><br \/>\n<span style=\"color: #000000;\">Corn from one raw ear<\/span><br \/>\n<span style=\"color: #000000;\">4 stalks celery<\/span><\/p>\n<p><!--more--><\/p>\n<p><span style=\"color: #000000;\">1\/2 tsp turmeric<\/span><br \/>\n<span style=\"color: #000000;\">1\/2 tsp thyme<\/span><br \/>\n<span style=\"color: #000000;\">1 bay leaf<br \/>\nFew shakes of red pepper flakes<\/span><br \/>\n<span style=\"color: #000000;\">One shake of cayenne pepper<\/span><br \/>\n<span style=\"color: #000000;\">handful of fresh basil torn up, maybe 20 leaves<\/span><br \/>\n<span style=\"color: #000000;\">7 strands saffron<\/span><br \/>\n<span style=\"color: #000000;\">salt and pepper<\/span><\/p>\n<p><span style=\"color: #000000;\">Stir until the vegetables soften and reduce, then add:<\/span><\/p>\n<p><span style=\"color: #000000;\">1 giant can chopped tomatoes<\/span><br \/>\n<span style=\"color: #000000;\">32 oz of lowfat low sodium chicken broth<\/span><br \/>\n<span style=\"color: #000000;\">A handful of bay scallops for flavor<\/span><br \/>\n<span style=\"color: #000000;\">Simmer 45 minutes, then add the rest of the scallops.<\/span><\/p>\n<p><span style=\"color: #000000;\">\u00a0It&#8217;s ready when they are done, 5-8 minutes, but I add them and cook another 30 minutes so they kinda melt into the stock. <\/span><span style=\"color: #000000;\">\u00a0I&#8217;ve also poached fish filets on top of the broth, for more protein and a heartier meal.<\/span><\/p>\n<h1><strong><span style=\"color: #993300;\">\u00a0My First Of The Fall Soup<\/span><\/strong><\/h1>\n<p><span style=\"color: #000000;\">This is my favorite First Of The Fall soup, brought on by the first cold snap of the season.\u00a0 This has no meat but you can throw a hamhock or 2 in with it if you like.<\/span><br \/>\n<strong><span style=\"color: #800000;\">Take a large pot add 2 tbsp oil and begin to heat.<\/span><\/strong><br \/>\n<strong><span style=\"color: #800000;\">Dice and throw into the pot:<\/span><\/strong><br \/>\n<span style=\"color: #000000;\">7 cloves of garlic<\/span><br \/>\n<span style=\"color: #000000;\">one large white onion<\/span><br \/>\n<span style=\"color: #000000;\">2 big carrots<\/span><br \/>\n<span style=\"color: #000000;\">3 stalks of celery<\/span><br \/>\n<span style=\"color: #000000;\">1 sweet potato<\/span><\/p>\n<p><strong><span style=\"color: #800000;\">Stir this around until the vegetables all have a little bit of browning happening.<\/span><\/strong><br \/>\n<span style=\"color: #000000;\">Then I add a giant can of chopped tomatoes<\/span><br \/>\n<span style=\"color: #000000;\">32 oz lowfat, low sodium chicken broth<\/span><\/p>\n<p><span style=\"color: #000000;\">Salt and pepper<\/span><br \/>\n<strong><span style=\"color: #800000;\">1 tbsp each:<\/span><\/strong><br \/>\n<span style=\"color: #000000;\">tarragon<\/span><br \/>\n<span style=\"color: #000000;\">thyme<\/span><br \/>\n<span style=\"color: #000000;\">cumin<\/span><br \/>\n<span style=\"color: #000000;\">oregano<\/span><br \/>\n<span style=\"color: #000000;\">Worchestershire<\/span><\/p>\n<p><span style=\"color: #000000;\">\u00a01 bay leaf<\/span><br \/>\n<span style=\"color: #000000;\">\u00a0bout 30 fresh basil leaves\u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\">I let this cook at least 45 minutes, but it often ends up simmering for 2-3 hours because I like the flavor of the tomato after it hits that breakdown point.<\/span><\/p>\n<p><em><strong><span style=\"color: #800000;\">Before serving, I add a tbsp of Sriracha sauce and a tbsp of apple cider
