Once you have everything on hand, it&#8217;s quick and easy to make. The unusual ingredients are found dried, canned or frozen in\u00a0Oriental\/Asian markets and online. \u00a0Simply make your shopping list, stock your pantry and then make this delicious soup. \u00a0For non-vegetarians, add your favorite carcass for flavor and fat. \u00a0You can spice this to your liking, this recipe as is will not be very hot nor very spicy.<\/span><!--more--><\/p>\n<p>6 cups of \u00a0a good low sodium chicken stock or broth<br \/>\n1 cup of <a href=\"http:\/\/www.templeofthai.com\/food\/pickled_preserved\/treeears-3321051020.php\">dried tree ear\/cloud ear fungus<\/a> cut into strips<br \/>\n1 cup of <a href=\"http:\/\/www.google.com\/products\/catalog?hl=en&amp;gs_sm=e&amp;gs_upl=950l4792l0l5227l23l15l0l7l7l0l324l1288l14.3-1l22l0&amp;bav=on.2,or.r_gc.r_pw.,cf.osb&amp;biw=1228&amp;bih=727&amp;q=buy+bamboo+shoots+online&amp;um=1&amp;ie=UTF-8&amp;tbm=shop&amp;cid=3122123484396863050&amp;sa=X&amp;ei=9dgvT5fVF8mcgQfc3ojkDw&amp;ved=0CH4Q8wIwAg\">bamboo shoots<\/a>, cut into strips<br \/>\n1 cup of<a href=\"http:\/\/www.templeofthai.com\/food\/pickled_preserved\/shitake-3310142022.php\"> dried shiitake mushrooms<\/a>, soaked and cut into strips<br \/>\nsmall handful of <a href=\"http:\/\/www.templeofthai.com\/food\/chinese\/lilybuds-3400000300.php\">dried lily buds<\/a><br \/>\n1 cup of <a href=\"http:\/\/www.nasoya.com\/products\/tofu\/firm.html\">tofu<\/a>, <span style=\"color: #000000;\">cubed (I like the firm style)<\/span><\/p>\n<p><span style=\"color: #000000;\">2 eggs<\/span><br \/>\n<span style=\"color: #000000;\">1 tablespoon of white vinegar<\/span><br \/>\n<span style=\"color: #000000;\">1 tablespoon of<\/span> <a href=\"http:\/\/www.theperfectpantry.com\/2006\/08\/black_vinegar.html\">Zhejiang black vinegar, a\/k\/a\u00a0black rice vinegar, Chinese brown rice vinegar, brown rice vinegar, Chinkiang vinegar, Chekiang vinegar, Chenkong vinegar.<\/a><\/p>\n<p>1 tablespoon of dark soy sauce<br \/>\n1 tablespoon of hoisin sauce<br \/>\n1 tablespoon of fresh lemon juice<br \/>\n1 tablespoon of <a href=\"http:\/\/www.templeofthai.com\/food\/chili_pastes\/chilipastebasil-5533300193.php\">chili oil (or chili paste)<\/a><br \/>\n<span style=\"color: #000000;\">1 teaspoon sesame oil<\/span><br \/>\n<span style=\"color: #000000;\">\u00bd cup cornstarch slurry (water mixed with 2 TBSP cornstarch)<\/span><br \/>\n<span style=\"color: #000000;\">Few shakes of black or white pepper to taste<\/span><\/p>\n<p><span style=\"color: #000000;\">Method<\/span><br \/>\n<span style=\"color: #000000;\">1) Put chicken stock in a pot. Bring stock to boil over high heat. Add shiitake mushroom, bamboo shoots, cloud ear fungus. Reduce fire to low heat, and simmer for 20 min.<\/span><\/p>\n<p><span style=\"color: #000000;\">2) Add in chili oil\/ paste pepper. Stir well, and simmer for another 10 min.<\/span><\/p>\n<p><span style=\"color: #000000;\">3) Stir in cornstarch slurry until consistency is slightly thickened.<\/span><\/p>\n<p><span style=\"color: #000000;\">4) Break eggs in a bowl, briefly beat with serving fork then swirl eggs into the soup in stages. Stir constantly till egg-drop forms strips. Add tofu, and simmer for 1 min. Heat off. Stir in lemon juice, vinegars and sesame oil AFTER heat is off.
