{"id":1297,"date":"2016-05-28T21:52:58","date_gmt":"2016-05-29T01:52:58","guid":{"rendered":"http:\/\/goddessgrub.com\/blog\/?p=1297"},"modified":"2016-05-28T21:57:15","modified_gmt":"2016-05-29T01:57:15","slug":"lowfat-savory-chicken-stew","status":"publish","type":"post","link":"http:\/\/goddessgrub.com\/blog\/lowfat-savory-chicken-stew\/","title":{"rendered":"Lowfat Savory Chicken Stew"},"content":{"rendered":"<p><span style=\"color: #000000;\"><a href=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2016\/05\/chicken-stew.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1298\" src=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2016\/05\/chicken-stew.jpg\" alt=\"chicken stew\" width=\"250\" height=\"209\" \/><\/a>This stew works best with chicken thighs (more fat adds more flavor) but you can use chicken breast if you prefer to keep it leaner. \u00a0This stew has high flavor. \u00a0When I make it with chicken thighs, I make it a day ahead of time, so I can\u00a0refrigerate overnight and let any\u00a0fat rise to the top so I can skim it off. \u00a0\u00a0<\/span><!--more--><\/p>\n<p><strong><span style=\"color: #993300;\">Ingredients<\/span><\/strong><br \/>\n<span style=\"color: #000000;\">2\u00a0Tbsp olive oil<\/span><br \/>\n<span style=\"color: #000000;\">1 large\u00a0onion, chopped (about 2 cups)<br \/>\n1 tsp sugar (adds sweet flavor)<\/span><br \/>\n<span style=\"color: #000000;\">1 tsp vinegar (adds sour flavor)<\/span><br \/>\n<span style=\"color: #000000;\">1 stalk celery, chopped<br \/>\n1 fat carrot, chopped<br \/>\n3 cloves garlic, chopped<br \/>\n1\/2 bunch of fresh parsley, chopped fine<br \/>\nA handful of chopped green beans <\/span><\/p>\n<p><span style=\"color: #000000;\"><span style=\"color: #993300;\"><strong>1 lb boneless, skinless chicken thighs, cut into 2-inch chunks<br \/>\n<\/strong><\/span><\/span>1\/2 cup dry white wine (like Sauvignon blanc)<br \/>\nOne 32 oz box of low sodium chicken broth<br \/>\n1 tsp <a href=\"http:\/\/www.thaitable.com\/thai\/ingredient\/tamarind-paste\">tamarind paste<\/a> (adds sour flavor)<\/p>\n<p><span style=\"color: #000000;\"><span style=\"color: #993300;\"><strong>The Spices<\/strong><\/span><br \/>\nTwo shakes of dry oregano<\/span><br \/>\n<span style=\"color: #000000;\">Two sprigs\u00a0of fresh thyme<br \/>\n1\u00a0shake of crushed red pepper (adds heat)<br \/>\n1 shake of ground cinnamon<br \/>\n1 tbsp chopped fresh rosemary leaves<br \/>\n1\/2 tsp freshly crushed fennel seed<\/span><\/p>\n<p><span style=\"color: #000000;\"><span style=\"color: #993300;\"><strong>These add sodium<\/strong><\/span><br \/>\n1 tsp <a href=\"http:\/\/tablematters.com\/2013\/03\/14\/something-fishy\/\">fish sauce<\/a> (this will add umami also)<br \/>\n1 tsp soy sauce<br \/>\nSalt to taste<br \/>\n<\/span><\/p>\n<p><span style=\"color: #000000;\">Freshly ground black pepper to taste<br \/>\n<\/span><\/p>\n<p><span style=\"color: #993300;\"><strong>Method<\/strong><\/span><br \/>\n<span style=\"color: #000000;\">1. \u00a0\u00a0Heat olive oil in a large pot over medium-high heat. Add onion and saut\u00e9 until golden, about 10 minutes. Turn heat to medium, add the brown sugar and vinegar and simmer another 5 minutes.<\/span><\/p>\n<p><span style=\"color: #000000;\">2. Add the garlic, celery, carrot, parsley and the spices and cook 3-4 minutes. Then pour into bowl and set aside while you use the pan to cook the chicken.<\/span><\/p>\n<p><span style=\"color: #000000;\">3. Add chicken to the pan and brown. \u00a0Add soy sauce and stir the chicken around in it.<\/span><\/p>\n<p><span style=\"color: #000000;\">4. Add the vegetables back in, as well as the chicken broth, wine and fish sauce. Gently cook for 30\u00a0minutes. Add green beans, stir in and remove from heat. I like them crisp.<\/span><\/p>\n<p><span style=\"color: #000000;\">5. At this point, I let it cool and put it in the refrigerator overnight, to let the fat rise to the top.
