{"id":1011,"date":"2014-10-09T15:29:09","date_gmt":"2014-10-09T19:29:09","guid":{"rendered":"http:\/\/goddessgrub.com\/blog\/?p=1011"},"modified":"2014-11-01T07:01:56","modified_gmt":"2014-11-01T11:01:56","slug":"a-basic-asian-soup-base-that-i-like","status":"publish","type":"post","link":"http:\/\/goddessgrub.com\/blog\/a-basic-asian-soup-base-that-i-like\/","title":{"rendered":"A versatile, basic Asian inspired soup that I like"},"content":{"rendered":"<p><a href=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2014\/10\/tom-yum-goong.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-1014\" src=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2014\/10\/tom-yum-goong-300x225.jpg\" alt=\"tom yum goong\" width=\"300\" height=\"225\" srcset=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2014\/10\/tom-yum-goong-300x225.jpg 300w, http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2014\/10\/tom-yum-goong.jpg 360w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>I love a spicy Asian soup, whether the traditional <a href=\"http:\/\/goddessgrub.com\/blog\/?p=1006\">Thai tom yum,<\/a> a <a href=\"http:\/\/goddessgrub.com\/blog\/?p=155\">Cantonese hot and sour soup<\/a> or an <a href=\"http:\/\/goddessgrub.com\/blog\/?p=51\">Asian style fish soup<\/a>.\u00a0 I also love easy formulas, especially for favorite recipes.\u00a0 Here&#8217;s a basic soup I make using Asian flavors.\u00a0 It&#8217;s the combination of these flavors that give it that spicy Thai\/Vietnamese taste. \u00a0 Keep the ingredients on hand in the freezer and you can have a restaurant quality soup in less than 30 minutes.\u00a0\u00a0 Then I add whatever vegetables or proteins I fancy that day, often simply mushrooms, scallions or snow peas, and shrimp or a fish filet.\u00a0 Dig in.\u00a0 <!--more--><\/p>\n<p><span style=\"color: #993300;\">Boil 4 cups water or chicken broth, then add:<\/span><br \/>\n2 stalks of lemon grass, crushed first then chopped<br \/>\n4 kaffir lime leaves, chopped into slivers<br \/>\n4 slices ginger, about a thumb size, chopped<br \/>\n1 tablespoon tamarind paste (for sour taste)<br \/>\n1 seeded, slivered chili of your choice (I use a mild goat pepper chili)<\/p>\n<p><span style=\"color: #993300;\">Simmer on medium heat<\/span> for 10-15 minutes.<br \/>\n<span style=\"color: #993300;\">Strain the broth<\/span> from the grasses, leaves and seeds into a new pot.<\/p>\n<p><span style=\"color: #993300;\">Adjust taste<\/span> using:<br \/>\n1 tablespoon fish sauce (for salt and depth of flavor, I use <a href=\"http:\/\/www.amazon.com\/Three-Crabs-Brand-24-Ounce-Bottle\/dp\/B001OQWK0W\/ref=sr_1_1?ie=UTF8&amp;qid=1414839283&amp;sr=8-1&amp;keywords=three+crabs+fish+sauce\">Three Crabs brand<\/a>)<br \/>\nA squirt of lime or rice vinegar to make it sour.<br \/>\nA pinch of palm sugar to offset the lime.<\/p>\n<p>You now have a tasty broth.<br \/>\n<a href=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2014\/10\/shrimp-soup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-1018\" src=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2014\/10\/shrimp-soup-150x150.jpg\" alt=\"shrimp soup\" width=\"150\" height=\"150\" \/><\/a><br \/>\n<span style=\"color: #993300;\">I like to add a dozen raw shrimp<\/span> (heads on for flavor,) a handful of scallops or a tilapia filet the last 5 minutes of cooking.\u00a0<span style=\"color: #993300;\"> I always add a handful of mushroom slices, sliced scallions.\u00a0<\/span> Snow peas and asparagus are also favorites, <span style=\"color: #993300;\">you can add slices of beef or pork,<\/span> even tofu and small meatballs.<\/p>\n<p><a href=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2014\/10\/Chili-Garlic-Sauce.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-1015\" src=\"http:\/\/goddessgrub.com\/blog\/wp-content\/uploads\/2014\/10\/Chili-Garlic-Sauce-150x150.jpg\" alt=\"Chili Garlic Sauce\" width=\"150\" height=\"150\" \/><\/a><span style=\"color: #993300;\">BEFORE SERVING, if you like hot and spicy,<\/span> dab a teaspoon of chili garlic sauce or <a href=\"http:\/\/www.huyfong.com\/no_frames\/sriracha.htm\" target=\"_blank\"> Sriracha chili garlic sauce<\/a>.
