The seaweed is optional, but I enjoy the flavor.<\/span><\/p>\n<p><span style=\"color: #000000;\">2. \u00a0\u00a0\u00a0 In 10&#8243; clean, dry cast iron or other skillet <strong>on medium heat, lightly toast the salt and seaweed strip<\/strong>, using the dry pan, no oil. The salt will turn a subtle greyish color.<\/span><\/p>\n<p><span style=\"color: #000000;\">3. \u00a0\u00a0\u00a0 <strong>After maybe 2-4 <\/strong><\/span><span style=\"color: #000000;\"><strong>minutes, you can remove the kelp or kombu strip<\/strong>, cool slightly, then break up into small pieces. Return the seaweed pieces to the pan.<\/span><\/p>\n<p><span style=\"color: #000000;\">4. \u00a0\u00a0\u00a0 <strong>Add the sesame seeds and toast about another 6-8 minutes or until the seeds are golden. Stir constantly<\/strong> while the seeds toast and watch carefully.<span style=\"color: #ff0000;\"> If the seeds burn, you have to start over. Trust me.<\/span> Reduce heat if necessary.<\/span><\/p>\n<p><span style=\"color: #000000;\">5.\u00a0 \u00a0\u00a0\u00a0 <strong>Remove pan from heat<\/strong> and allow seed mixture to cool.<\/span><\/p>\n<p><span style=\"color: #000000;\">6.\u00a0 \u00a0\u00a0\u00a0 <strong>Grind the seeds in batches to the consistency of coarse cornmeal<\/strong>. This means that about 3\/4 of the seeds will be ground and the remaining either partially ground or whole.<\/span><\/p>\n<p><span style=\"color: #000000;\">7.\u00a0 \u00a0\u00a0\u00a0 Store in airtight container.
